Is there any method to insert variables from your notes? i know that you can insert images with [[imageName- ]] and footnotes with {{footnote- }}, but is there a form to support replacement for character names, etc.? If I write a document with <<character1>> it should replace with <<character1-Harry Potter>> from the document notes or project notes (so that it is available throughout the project).

Is there a list of available variables somewhere? I didn't know the one about images or footnotes and am wondering where I can go to get a list of available ones?

Currently there are only the two types already mentioned. As they currently only take affect during Export, they only appear in the Exporter Documentation. You can either read our documentation on the various Exporters or you can watch Götz' wonderful third screencast that covers exactly that, it is accessible through the Help as well.

For the variables, why would you need more than the two we propose. Okay, you gave an example, but is it really feasible to write a story with placeholders for character names? And how do you go for stories that spread multiple documents? However, you should definitely have a look at our Search and Replace mode. There is also some nice documentation on it, which can be found in the Help as well. It makes it very easy to replace e.g. character names in exactly the spots you are looking for.
