You can do something like rich text by setting up styles for italic and bold and have them displayed like that. But the tags wont' go away. We are thinking about building a view that actually hides the tag, having it even more like rich text.
Plain pure original rich text like in all other apps, will hover not come. There are several good competitors out there that follow this approach. To not do rich text and by that enabling semantics is the core of Ulysses' concept, so this will probably not change...
There are already some really great tools out there with which you can easily encrypt your files. One I found really useful is Espionage, which you might find to work well for your, too. I heve to admin I did not yet test it with Ulysses but doubt that there might occur any problems...
That's right. However, markers cannot overlap, Inline styles can. So there's a tradeoff depending on what you want. Inline styles can also be typed, markers work via menu/shortcut only.
Just got to the style preferences, in the last column you can define a shortcut for each style. Please be aware that you choose shortcuts not yet used by the application. There are some issues we are working on if you do it otherwise.
Snapshots is something we have had on our list for ages. And we plan to include them some day. It's just a matter of time we have and of a concept that is clean and powerful enough. Eventually you will have this in Ulysses as well :)

An upcoming version of Ulysses will allow you to fade the tags, reducing clutter from the screen. Rich text editing, however, is not on our schedule.
