Well there is an "Append project..." alternative in the Project menu, but this will add the whole project to your currently open project. I would love to have some more alternatives here to choose from, like what documents to import/append and if the notes should be included.
Otherwise there is always select all and copy-paste …

You could actually use a two-step workaround:
    1. Use the Ulysses Project Exporter to export documents of your project to a new project.
    2. Append this new project to the other project.

I think it would be great if we could open to projects simultaneously and move documents and collections. Is there some tecnical obstacle or it is a feature we can expect for the future?

The current version of Ulysses has big problems opening two projects. This is more or less due to my silliness, and there are in face quite huge obstacles in the code. Nevertheless, you definitely can expect dramatic improvements in the future.

I've posted my problem about the slowdown while tiping. Now i notice that it could be linked to the dimension of the project. If i start a new project i have no problem, but when it comes to has many document inside, categories and so on, it slows the tiping. It has any sense to you?

Yes it does. We will completely re-design parts of the project management with the next milestone release. Until then, I'm afraid we have to live with the limitations of the current version.
